Apricots with Vanilla Cinnamon Syrup

- 2 cups water
- 1/2 cup caster sugar
- 1 vanilla bean, split
- 1 cinnamon stick
- 225g Angas Park Soft & Juicy Apricots
Method
- Place water, sugar, vanilla and cinnamon in a saucepan and bring to the boil.
- Reduce heat, add apricots and simmer for 10 minutes.
- Serve with yoghurt or as an accompaniment to cereal.
