Baked Pear and Custard Slice

Preparation time: 10 minutes Cooking time: 45 minutes

Ingredients

  • 100g butter
  • 2/3 cup caster sugar
  • 1 egg
  • 1 cup Angas Park Dried Pears, chopped
  • 1 1/2 cups self-raising flour
  • 1/2 cup milk
  • 1 cup vanilla custard

Method

  1. Place butter and sugar in a bowl and beat until light and creamy. Add egg and beat well.
  2. Stir in pears then fold in flour and milk alternately.
  3. Spread half of the mixture in the bottom of a lamington tin lined with baking paper. Top with custard then place spoonfuls of mixture over custard to almost cover.
  4. Bake in a pre-heated moderately slow oven (150ºC-170ºC) for 40-45 minutes or until golden. Cool slightly before slicing.
