Baked Pear and Custard Slice

Cooking time: 45 minutes
Ingredients
- 100g butter
- 2/3 cup caster sugar
- 1 egg
- 1 cup Angas Park Dried Pears, chopped
- 1 1/2 cups self-raising flour
- 1/2 cup milk
- 1 cup vanilla custard
Method
- Place butter and sugar in a bowl and beat until light and creamy. Add egg and beat well.
- Stir in pears then fold in flour and milk alternately.
- Spread half of the mixture in the bottom of a lamington tin lined with baking paper. Top with custard then place spoonfuls of mixture over custard to almost cover.
- Bake in a pre-heated moderately slow oven (150ºC-170ºC) for 40-45 minutes or until golden. Cool slightly before slicing.
