Beef and Prune Pies
Preparation time: 15 minutes

Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 500g diced beef
- 1/2 cup Angas Park Pitted Prunes, chopped
- 2 tablespoons plain flour
- 1/2 cup red wine
- 1/2 cup water
- freshly ground salt and pepper, to taste
- 8 sheets shortcrust pastry
Method
- Heat oil in a non-stick frying pan. When hot add onion, garlic and beef and sauté until golden. Add prunes and flour and cook for a further minute.
- Add wine, water and salt and pepper, bring to the boil then reduce heat to low and cook for 2 minutes. Set aside to cool.
- Cut out 48 circles of pastry using a 5cm cookie cutter. Press half of them into mini muffin pans. Top with beef mixture then press pastry lids down firmly.
- Bake in a pre-heated moderately hot oven (180ºC-200ºC) for 30 minutes or until golden.
