Caramelised Onion Frittata

Ingredients
- 2 tablespoons olive oil
- 3 onions, sliced
- 2 cloves garlic, chopped
- 1/2 cup Angas Park Pitted Prunes, chopped
- 1 tablespoon brown sugar
- 5 eggs
- 1/2 cup milk
- sea salt, to taste
- freshly ground pepper, to taste
Method
- Heat oil in a frying pan. When hot add onions and garlic and sauté until golden brown. Add prunes and sugar and cook a further 1-2 minutes.
- Place eggs, milk and salt and pepper in a bowl and whisk until frothy. Add to frying pan and cook over medium heat for 2-3 minutes.
- Place under a grill and cook until golden brown. Serve sliced.
Serves 6-8
