Honey Chicken
Preparation time: 10 minutes
Cooking time: 1 hour 30 minutes
Ingredients
- 1.8kg chicken
- 1 tablespoon honey
- 1 tablespoon seeded mustard
Stuffing
- 3/4 cup dry breadcrumbs
- 1/2 teaspoon ground cardamom
- 1/4 cup Angas Park Dried Apricots, chopped
- 1/4 cup pistachios, chopped
- 1 egg, lightly beaten
- 2 tablespoons butter, melted
- juice of 1 lemon
Method
Stuffing
- Mix all ingredients together until well combined. Place inside cavity of the chicken, pressing down firmly.
Chicken
- Mix together honey and mustard and brush over chicken.
- Place on a tray on top of a roasting pan and bake in a pre-heated moderately slow oven (150ºC-170ºC) for 1 hour. Cover with foil if browning too quickly and return to the oven for a further 30 minutes or until cooked. Serve with roasted vegetables.
