Mango and Pear Chicken

Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 3 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 425g tin mangoes, drained
  • 1 cup Angas Park Dried Pears, chopped
  • 1 cup chicken stock
  • 500g chicken breast fillets, thinly sliced

Method

  1. Heat butter in a saucepan. Add onion, garlic, cumin and coriander and cook over medium heat for 1 minute.
  2. Add mangoes, pears and chicken stock, reduce heat to low and simmer for 10 minutes.
  3. Add chicken and cook a further 2-3 minutes or until cooked. Serve with rice and garnished with fresh coriander if desired.
