Mango and Pear Chicken

Ingredients
- 2 tablespoons butter
- 1 onion, chopped
- 3 cloves garlic, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 425g tin mangoes, drained
- 1 cup Angas Park Dried Pears, chopped
- 1 cup chicken stock
- 500g chicken breast fillets, thinly sliced
Method
- Heat butter in a saucepan. Add onion, garlic, cumin and coriander and cook over medium heat for 1 minute.
- Add mangoes, pears and chicken stock, reduce heat to low and simmer for 10 minutes.
- Add chicken and cook a further 2-3 minutes or until cooked. Serve with rice and garnished with fresh coriander if desired.
