Peach and Coconut Pudding

Ingredients
- 125g unsalted butter
- 1/2 cup golden syrup
- 1 1/2 cups self-raising flour
- 200g Angas Park Dried Peaches, diced
- 1 cup desiccated coconut
- 2 eggs
- 1/2 cup milk
Method
- Place butter and golden syrup in a medium saucepan and heat until butter melts.
- Place flour, peaches and coconut in a mixing bowl and stir in eggs. Add butter mixture and milk and mix well.
- Place into 4 ovenproof tea cups and bake in a preheated moderately slow oven (150ºC-170ºC) for 20-25 minutes or until cooked
- Serve warm drizzled with extra golden syrup and cream or custard.
