Peach and Passionfruit Flummery
Preparation time: 10 minutes + refrigeration
Cooking time: 2 minutes
Ingredients
- 1/2 cup Angas Park Dried Peaches, chopped
- 1 1/2 cups water
- 1/2 cup caster sugar
- 1 1/2 tablespoons gelatine
- 2 tablespoons plain flour
- pulp of 3 passionfruits
Method
- Place peaches, water and sugar in a saucepan. Bring to the boil, reduce heat and cook a further 2 minutes. Gradually add gelatine and flour, stirring constantly. Remove from heat and pureƩ until smooth. Stir through passionfruit.
- Refrigerate until mixture starts to set then beat with electric beaters for 10 minutes or until thick and creamy.
- Spoon mixture into 4 martini glasses and refrigerate until set.
