Peach, Ginger and Lime Jam

- 200g Angas Park Dried Peaches, chopped
- 1 tablespoon freshly grated ginger
- grated zest of 1 lime
- 2 cups water
- 1/4 cup caster sugar
Method
- Place peaches, ginger, lime zest, water and sugar in a saucepan. Bring to the boil then reduce heat and simmer for 15-20 minutes. Puree until smooth.
- Place in a container and leave to set in the refrigerator.
