Potato Nests

Preparation time: 20 minutes Cooking time: 40 minutes

Ingredients

  • 500g potatoes, peeled
  • 1 egg
  • 1 1/2 cups ricotta
  • 1/2 cup Angas Park Dried Pears, chopped
  • 100g ham, chopped
  • 1 tablespoon rosemary

Method

  1. Finely grate potatoes and place in a mixing bowl. Squeeze out any excess moisture then add egg and mix well.
  2. Press into well-greased non-stick mini muffin trays to form nests. Spray with oil and bake in a pre-heated moderately hot oven (180ºC-200ºC) for 25-30 minutes or until golden.
  3. Mix ricotta, pears, ham and rosemary until combined. Spoon into potato nests. Place on a baking tray and heat for a further 5-10 minutes or until warm.
