Veal and Prosciutto Skewers

Cooking time: 8 minutes
Ingredients
- 500g veal loin steak, cut in half
- 4 slices prosciutto, cut in half lengthwise
- 8 sage leaves
- 8 Angas Park Dried Pears
- 4 skewers, soaked in water
- 2 tablespoons olive oil
Method
- Place the veal under some plastic wrap and beat with a meat mallet until approximately 2mm thick.
- Lay out a piece of prosciutto. Place a piece of veal on top, then a sage leaf and a pear. Roll up to form a parcel. Repeat with remaining ingredients.
- Place two rolls on each skewer. Heat oil in a frying pan. When hot add skewers and cook for 2-3 minutes each side or until cooked. Serve on a bed of baby spinach.
