Baba Ganoush

Ingredients

1 eggplant

2 cloves garlic

1/4 cup Angas Park Pitted Prunes

1/2 teaspoon sea salt

juice of 1 lemon

2 tablespoons olive oil

2 tablespoons tahini

Method

  1. Place eggplant and garlic on a baking tray and bake in a pre-heated moderate oven (170ºC-190ºC) for 30 minutes. Remove garlic, peel and return eggplant to oven for a further 15 minutes.
  2. Place eggplant, garlic, prunes and salt in a food processor and process until smooth. Add lemon juice, oil and tahini and process until well combined.
  3. Serve with Turkish bread.
