Caramelised Onion Frittata

2 tablespoons olive oil

3 onions, sliced

2 cloves garlic, chopped

1/2 cup Angas Park Pitted Prunes, chopped

1 tablespoon brown sugar

5 eggs

1/2 cup milk

sea salt, to taste

freshly ground pepper, to taste


  1. Heat oil in a frying pan. When hot add onions and garlic and sauté until golden brown. Add prunes and sugar and cook a further 1-2 minutes.
  2. Place eggs, milk and salt and pepper in a bowl and whisk until frothy. Add to frying pan and cook over medium heat for 2-3 minutes.
  3. Place under a grill and cook until golden brown. Serve sliced.
