Cashew Crusted Blue-eye

1/3 cup dry breadcrumbs

1/3 cup Angas Park Dried Apricots

1/2 cup cashews

2 tablespoons butter

1/4 cup dill

juice of 1 lime

4 Blue-eye fish fillets


  1. Place breadcrumbs, apricots, cashews, butter, dill and lime juice in a food processor and process for 2-3 minutes.
  2. Press mixture on top of each fillet, spray with oil then place on baking trays lined with baking paper.
  3. Bake in a pre-heated moderately hot oven (180ºC-200ºC) for 10 minutes or until fish is cooked.
  4. Serve with salad or vegetables and extra lime.
