Stuffed Calamari

1/2 cup dry breadcrumbs

1/2 cup Angas Park Dried Peaches, chopped

1 cup unsalted macadamias, chopped

1 egg

1/4 cup dill, chopped

juice and zest of 2 limes

2 tomatoes, chopped

6 small squid tubes, cleaned


  1. Place breadcrumbs, peaches, macadamias, egg, dill, lime juice and zest and tomatoes in a bowl and mix well.
  2. Stuff squid tubes with breadcrumb mixture. Place on a baking tray.
  3. Bake in a pre-heated moderate oven (170ºC-190ºC) for 10 minutes. Slice and serve with salad.
